Balsamic Berry Salad

Ingredients

1 pint of strawberries, quartered
1 quarter pint of blackberries
1 pint of sugar snap peas, chopped
2 pickling cucumbers, chopped
1 handful of basil, finely chopped
1 handful of fresh mint, finely chopped
1 brick of feta cheese, crumbled 
¼ cup balsamic vinegar 
1 tablespoon of honey 
½ teaspoon salt 
⅛ teaspoon black pepper


Instructions

Combine washed strawberries, blackberries, peas, cucumbers, and herbs into a large mixing bowl. Crumble the feta into the mixture and drizzle with a splash of balsamic vinegar and a spoonful of honey. Lightly season with salt and pepper and enjoy. Store salad in an airtight glass container in the refrigerator for up to three days. This salad pairs beautifully with a lean protein, like chicken or other locally-sourced poultry.
